Can you please help to understand, when to use - Edit, Clear and Void >> functions in Sales >> Sales Control >> Edit, Clear and Void this sale

You should almost never use those functions.
Clear This Sale works on a sale that has not be Finished.
Void This Sale should not be used.
Edit This Sale should not be used.
If you need to change a sale because of a mistake or a return, start a new sale and return the item that way.

I need to ask, then, how best to handle a Layaway. We've
always
had to Edit a Layaway to be able to add the remaining payment.
Is there some other way that I've totally missed?

You can use a Payment button in the sales screen to add a payment to a layaway.
Or, use the Customer Control window to add a payment. Select the customer and use the Payment button.
